CHICKEN & APRICOT PUREE

Delicious and sweet suitable for babies from 6 months. Recipe serves 5 portions (suitable for freezing)

Ingredients

  • 175 grams chicken thigh fillets (approx 2 boneless thighs)
  • 50 grams onion, finely chopped
  • 2 teaspoon(s) SPAR canola oil
  • 200 grams sweet potato, peeled and finely chopped
  • 8 dried SPAR apricots, chopped
  • 400 ml freshly made chicken stock

Method

  1. Chop chicken thighs into small cubes.  Heat the oil in a small pan, add the onions and fry till soft for about 4 mins.  Add chicken cubes & saute for a further 2 mins
  2. Add the sweet potato and saute for 1 min before adding the chopped apricots and the chicken stock. Bring to the boil then turn heat down and simmer, covered for 15 mins until all tender
  3. Take off oven and pour into a Blender or Food Processor and blend until smooth.  Serve slightly warm
