Ingredients
- 2 tbsp. cooking oil
- 1 medium onion, chopped
- 4 minced garlic cloves
- 500g. SPAR Frozen Tilapia fillets
- 2 tbsp. curry powder
- 1 tsp. ground ginger
- 1/2 cup water
- 4 cups of SPAR Thai White Rice
- 2 cups of SPAR Mixed Vegetables
Method
- Cook the SPAR Thai White Rice; when almost ready as your mixed vegetables and reduce heat.
- Heat the cooking oil over high heat in a deep pan until it begins to sizzle.
- Reduce the heat to medium-high. Add the onion and sauté for two minutes, or until the onion begins to turn translucent. Add the garlic and sauté for one minute.
- Add the curry powder, ground ginger and 1/2 cup of water and sauté for five minutes to allow the flavors to blend.
- Place the fish fillets in the pan and sauté the tilapia, uncovered, for 15 to 20 minutes. Turn the fillets with the spatula occasionally to ensure that they are cooking evenly. At the end of the cooking time the fish should be flaky and cooked through.
Serve it hot on a bed of rice and vegetables, drizzle curry sauce on top.
